when did you decide to take on wedding cakes? I am a beginner but want to learn how to deocrate wedding cakes. Any advice icon_lol.gif I am in level 1 decorating. I find it hard to know what each tip does and when to use it. Any advice on this also.

Interesting question. How does one gain enough confidence to take on a wedding cake...one of the most important cakes in a persons life.

As for me... I've been decorating for 20 years. Never seriously. Just for my girls and neice /nephews and family b days. I got the wilton year books and did a few from those books. I finally did a graduation cake for some one else who wanted to pay me. That was last year. I took the wilton courses 1 2 3 fondant is next but now I'm too busy with cakes to take it. The more you do the more confident you get. I delivered my first wedding cake today and was a nervous wreck. Your riight. its the most important day for the couple and the cake IS important in the reception.

I believe my first wedding type cake was 17 years ago. I did not have the correct size pans but the bride and groom did not care. I did a half sheet cake with a 1/4 sheet on top with yellow roses. Still have that picture and boy have I improved over the years.

I finished Wilton Course 1 about 2 months ago. I have sold 3 cakes since. I am going to finish taking course 2 & 3 and maybe take the candy making course also. I just love it! I can't wait till I can make more money at it and be more confident. I have learned so much just from this site

The best advice I have for tips is to practice. I learned by writing and doing borders on the back of a cookie sheet. I would just scrape off the icing and put it back in the bag and then put the bag in the fridge when it got too warm. Find a book with examples. And just because you have a 104 (rose tip) doesn't mean that you can only make roses with it use it for borders and ruffles. Play with you tips and have fun! icon_biggrin.gif

zero classes for me.

A wedding cake is just 3 or 4 small cakes all stacked together. If you've done a 2-tier birthday cake, you can do a wedding cake. Dont' be overwhelmed by the size .... just one cake at a time
