Cupcake Cake: Is There A Trick To Getting Them All Even?

I wondered if there is a truck to making all the cupcakes rise evenly so they can be frosted together as a cake. Any tips?
my only suggestion would be to use a measuring cup. I use a 1/4 for each cupcake. also, if your batter sits out (say you only bake 12 at a time) each batch will rise differently... from my experience anyway. hope thats helpful. ![]()
I just did my first cup cake cake and I used a cookie dough scoop to scoop about the same amount of batter into each cupcake. They all rose to about the same height that way, and any minor differences were under the icing anyway. I just made sure the icing was flat on top when I was icing the "cake"
I use a scoop that I got from the local HR Supply, but I've heard of some people using scoops from Pampered Chef. Just something that portions the batter out equally.
Another thing you can do is place a large cutting board or weighted pan on top of them right after you take them out of the oven - this will give you a nice flat surface for icing.

measure and fill, bake
when fresh from oven and while still in muffin pan, lay a metal baking sheet on top and weigh down (full can of Crisco works well). Leave about 10 min.
this will moosh them all the same level.
I agree here!!! That is what I do. If your doing a vanilla and chocolate "cc cake" the chocolate will always rise higher than the vanilla, so I just weigh the tops down with something heavy. I lay a sheet of parchment paper over the tops of the cc and then a cookie sheet w/the crisco can on top!! It works awesome. Now mind you I didn't do that the first time I made a cc cake and learned my lesson.... ![]()
All I do is place a clean kitchen towel over the top of the cupcakes, still in the pan right when they come out of the oven and gently press and smooth out the towel with my hands. It levels them all out just fine but be sure to be careful because the steam can go right through the kitchen towel and it is HOT! Do it right when they come out of the oven so they kind of deflate. This way you don't have to cut the tops off to level them.
