This may be a dumb question, but I am really not sure. icon_confused.gif I am making crusting cream cheese frosting, do I use the wire whisk or paddle attachement?

paddle.

generally speaking, the paddle makes small bubbles, and the whip makes large bubbles.

Paddle, at a low/medium speed. The higher the speed the more air will be incorporated. That's why when you whip egg whites they are made using the whisk attachment at a higher speed. You need that much air for egg whites, not for buttercream.
