One tip that really helped me was to leave the dowels (or straws) out of the cake enough to put your fingers underneath. When you put the top cake on, let go of it and the weight of the cake will push the pillars the rest of the way in and you won't mess up the icing on your cake. Hope I am wording this right. The dowels (straws) need to be cut so when they are pushed in, they will be flush with the top of your bottom cake.
I am trying to do a castle cake and am refering to GRAMMASUE's gorgeous cake! She mentions that the top 3 turrets are dowelled into the board...how would I do that? and by board does she mean an actual wooden board or cardboard? I'm thinking wood but I have never done this stacking thing before....

I have heard of people putting the dowels in the board (wood) and then lowering the cakes onto the dowels. Could this be what she did? It looks complicated because the turrets are so tall. You could PM Grammasue and ask her for instructions.
The castle is made from an 8 hexagon and a 6 hexagon. I cut the 6 in half diagonally and pieced it to get the roof shape on the top cake. I made the towers a week in advance. I used the center of paper towel rolls for the towers. I brushed them with thinned royal icing and then covered them with fondant. The royal icing made the fondant stick to the towers. I rolled them over a cobblestone impression mat to get the look of stone, then dusted them with super pearl luster dust. I covered the ice cream cones for the tops of the towers in the same way, except I cut out circles of fondant and layered them to get the look of shingles. I dusted them with pink luster dust. I used lots of royal icing to glue wooden cake dowels on the inside of the top towers and let that dry overnight before I assembled the cake.
Both cakes are covered in fondant. I used the impression mat on that after I had covered the cake just pressed it into the sides. I cut a cake board for the top cake big enough to support the three top towers and cut holes in the board for the dowels of the top towers to go through. I also covered the cake board in fondant.
When I assembled the cake, I doweled the bottom cake to support the weight of the top cake and towers. I attached the towers to the sides of the cakes and to the cake boards with royal icing. All other trim and decorations are cut out of fondant and dusted with luster dust. I used brown and gold on the doors, and gray on the bench and windows.
