Refrigerating an unwrapped cake will cause it to go stale.

Freezing a saran wrapped undecorated cake layer will increase the moisture content.

If you don't want to freeze the cake, just wrap in saran wrap and leave on the counter. Or you could crumb coat and put under a dust cover.

I just used the last of my saran wrap for another cake and was wondering if I could just use the foil and leave it out. I don't really have time to crumb coat it since it is still cooling and I wanted to make the BC tonight so I am not swamped with making it and decorating it tomm morning. I also have a carrier with a top that snaps. Do you think I could put it in there wrapped in the foil?

I never wrap my cakes in foil without plastic wrapping it first. If it's just for overnight you could probably just stick it in the cake carrier if it seals well. Then you could leave it on your counter if you want to. I've left them out and put in the frig both ad it works fine. It'll be room temp in the morning if you leave it out.

I agree w/ all the above. If you can't plastic wrap it, it will stay fresher leaving it out but covered. The frig will dry a cake out quick and you don't want to chance all those ingredients being wasted on a dry cake!

P.S. I posted a question earlier and no one has answered it yet - about freezing filled cupcakes....anyone still up that can help? icon_cry.gif
