Strawberry Question

I am working with chocolate covered strawberries for decoration on top of a cake and want to know if any one can tell me if I need to keep them in the fridge after I dip them. Also, how long can they sit on top of the cake? New to this, can any one help??? Thanks!

Ooh - I'll tell you one secret - don't WASH the strawberries w/ a lot of water. Get a wet rag or a wet paper towel and "rub" the strawberries clean. I saw this on the Food Network for the company "Sherri's Berries". They make a lot of chocolate dipped strawberries. As for putting them in the fridge - I'm not sure. I'm not a choc. expert. I would say to keep them in a tightly sealed plastic container in the fridge - the only thing I would be worried about is condensation. As for putting them on the cake - they should be able to stay on there as long as you need them to unless the room is very warm - the chocolate will start to melt. If you're worried about it melting into the cake, you could put a small cakeboard on top of the cake and then cover the board w/ the strawberries..... that way they are still a pretty decoration, but aren't going to mess w/ the flavors of the cake or leave brown marks on the top of your cake! I don't think you have to keep them really cold. Sometimes chocolate picks up odors from the fridge making it taste different..so most people tell you not to put chocolate in the fridge. Though if you have to I don't think it will be a big deal.

I have read that you shoud put them in the fridge long enough for the chocolate to set up, about 15 minutes or so, then take them back out so they won't get condensation. I tried this the last time I made them and it worked well. Good luck! thumbs_up.gif

Do you use chocolate melts or do you have a special receipe. If so will someone share it with me. Thanks

I've used chocolate melts, but there is also something in the grocery store - it's like a can of chocolate and it has a choc. covered strawberry on the front of it. It's used for "dipping" and it hardens well. I know my mom has used this. I think both are good. If you look in your grocery store, I know mine usually has this "can of chocolate" right by the strawberries.

I just use regular chocolate chips. Adding a little shortening helps them become smooth. icon_smile.gif

Just some info about strawberries...

Strawberries don't ripen after they're picked. Once they're picked they only start to go bad. Most berries we find in the grocery are picked under ripe because they spoil quickly. If you can get local berries, they're usually ripe and then of course taste better. Buy the freshest, most strawberry smelling berries you can find and use them within a few days for best results.
