I've done a lot of looking around (at my usual sources: foodtv.com and epicurious.com), but I can't seem to find a recipe that offers consistent results. Does anyone have a tried and true Lemon Meringue Pie recipe?

On the cover of the April 2007 Bon Appetit magazine is a Lemon Meringue Ice Cream Pie with a Toasted Pecan Crust. It was amazing! I'm making 2 this weekend for a birthday (they asked for this instead of a cake) and another 2 a few weeks. The pecan crust was delicious as was the lemon! It was a nice twist from the usual and perfect for summertime.

Thanks Debs71 I've printed it off and can't wait to try it! I ended up making a Lemon Buttermilk Chess Pie (an old reliable recipe) from the Betty Crocker Cook Book.

Remember to use fresh lemon juice. Thought I would save a trip to the grocery store and used the botted stuff BIG Mistake icon_cry.gif
