Please Help Me Quick!

I've got a really time consuming cake to decorate tonight, and I'm just getting started, of course! I'm trying to make a strawberry vanilla mousse, and it's turning out lumpy, like there are chunks in it. It tastes great, but the texture is all wrong. I'm going to have to remake it.

Here's what I did:

4 cups heavy cream
2 boxes instant vanilla pudding
strawberry jam

I put the cream in a bowl. I dumped the boxes of pudding on top. I beat it with a hand mixer for about 2 minutes, then whisked the jam and folded it in.

How SHOULD I make this to get it smooth? I need to fix it NOW! TIA!!!

Stacey,
I know you are just looking to fix what you have....but I do not have an answer for it icon_sad.gif However, I am more than willing to share my own recipe with ya (if you want to see it, there is a pic in my photos). I know you only need the filling, but anyway.....here it is:


Kim's Strawberry Cake

1 package white cake mix
1 package (3 ounces) strawberry-flavored gelatin powder
1 cup vegetable oil
4 eggs, lightly beaten
1/4 cup strawberry margarita mix

3/4 cup mashed strawberries
1/8 c water
1t Strawberry flavoring

Mix all together pour in three 8" pans. Bake at 350 (until layers pull away from the pan).

Strawberry Icing
1 cup butter (*salted)

2 pound confectioners' sugar
1/2 cup mashed strawberries
Strawberry Margarita mix for liquid


*If using unsalted butter, add salt to mixture to cut sweetness! Add salt "to taste" a little at a time
Combine cake mix and gelatin powder in a large bowl. Beat in oil, eggs, mar. mix,water and strawberries. Pour into3 8-inch round greased and floured cake pans. Bake in a 350 degree oven for 30 minutes, until a toothpick inserted in center comes out clean.

Mmm, that does sound good...may have to try it next time!

Anyone else know how I should do this when I remake it? Should I use a hand whisk? Help!

Are the chunks fruit, or do they seem like something happened with the whipping cream? I don't see why the cream would get lumpy with two minutes of mixing. It wouldn't even be whipped by then.

Is it clumping after you put the jam in?? If so you could warm the jam to a syrup, let it cool, then fold in. A syrup form is smoother then the jam cold out of the jar. Just a thought=) Jen

If you whip your cream too long it "chunks up" I know, I did that this week. taste is fine, texture is off.

I remade it.

The jam is seedless and smooth, no chunks of fruit.

It is DEFINITELY a problem with the whipping cream / pudding.

ANYONE? I'm getting nervous, here! icon_cry.gif

When you are adding your pudding, do so slowly with a wire wisk. Once it is incorporated, you should be able to whip it up. My dd learned this technique just as you did. She "dumped" in the pudding and was left with lumps too. Hope this works for you.

A good blender/food processor would do the trick (I would think).

I have done that also. You need to mix the whipping cream for a couple of minutes then add the pudding. Don't over mix. This will add lumps for sure (it is turning into butter) Then fold in the fruit mix. You do have to be careful not to over mix.

I have done this too! By the way - the "bad" batch is yummy for dessert all by itself!! (was yearning for a sweet late night snack and had saved mine in the fridge!)
