What Do You Do With Your Wedding Cake While

I am just wondering what everone does with their wedding cakes that they make - like where do you store them? If I make a wedding cake a four tier for a Saturday wedding, when should I start making it? Do I bake the cakes and then freeze them until I need to decorate them? Or do I refrigerate them? I am new to this and I am going to making a small wedding cake in a couple of weeks and I am wondering if I bake the cakes on Wednesday what do I do with them?
I always bake the cakes in advance ..like a week or two and freeze them.Others prefer not to do this but sure helps save time.I start decorating about Thursday depending on how much I have to do and what medium like fondant etc...The more you can do in advance the better and allow yourself lots of un- interupted time to do it!!
I am not a big fan of freezing - unless you need to. I think if you have a wedding Sat, it's fine to start now. I usually wrap my cakes tightly in plastic wrap and keep in a cake dome either on my counter or in my fridge if I won't be frosting til the next day. Three days ahead should not be a problem if you keep them airtight. Once I frost them, if I can I will keep them in the fridge, each tier in its own cake dome - that's the nice thing about tiers, you can assemble at the last minute, making it easier to store the tiers for a day or two. I have made the cakes before hand and froze them and I have also made them a couple days ahead of time and put them in the fridge. I prefer to make them ahead and freeze them because its just Murphy's Law that a million and one things are going to come up the week that the cake needs to be made. For storing them after they have been decorated, I am really lucky because we have two fridges. If you don't, Im not too sure what you can do, put them in a coldroom (if you have one of those) maybe ???
