Anyone out there have a recipe for caramel filling? I remember reading one somewhere where you made it out of condensed milk? Can anyone help me out? TIA

I've made it by putting a can of condensed milk, unopened, in a pot of water. You boil it 3-4 hours depending on how thick you want it to be. You want to make sure you keep the can completley covered with water while cooking. I will set the timer to remind myself to add more water to the pot.

Make sure you let the can cool COMPLETELY before you open it. I will usually make mine the day before I need it. You can also make several at once and save them for later. After it sits for a while (month+) it will form some sugar crystals, but I haven't had it go 'bad'.

You can do this several ways as not everyone feels comfortable boiling the can on the stove, but I have always done it as listed above.

I just make Dulce de Leche buttercream by mixing the Dulce de Leche into my buttercream. I don't measure it, I just put a big honkin' spoonful of it in there and fold it together and then taste it and go from there. Soooo good with chocolate cake or brownies!

For me personally, I thought the condensed milk tasted more like Dulce de Leche.
I like to use a good, sticky caramel popcorn recipe for my caramel fillings.

I use my slow cooker and cook the unopened cans of condensed milk for 6 hours on high with the water completely covering the cans. Then turn it off and leave them sitting in there overnight and by morning they are room temp. and ready to go.

Can I just use the caramel as a filling or should I add it to a buttercream? I have a chocolate cake to make and they want carmel filling.

I use it as a filling all the time. Just make sure that you put a dam of icing to hold it in.

You can also add it to icing ...

Would a light covering of buttercream be in order for the caramel not to seep into the cake?

I don't put buttercream under it when using as filling. It's pretty thick - spreadable though.

Great. Would the cake need to be refrigerated? Just thinking room in fridge

I've never put the cake (with it in it) in the fridge and it has been fine. If I have left overs from the can I'll put that in a bowl in the fridge, but it usually doesn't last very long. icon_smile.gif

No, you don't need to add anything to it, I use it all the time in my cakes, I buy dulce de leche already made at Albertsons or food4less.

Oh yes the crockpot idea is definately the way to go! My kids and DH just love the taste of the caramel - I put some on the neopolitan bundt cake and they couldn't get enough -
