I need some recipes for fillings that don't need to be refrigerated. Most of my customers want to pick up their cakes early and then leave them out most of the day on display. Does anyone have some good recipes?? Is there a rule of thumb that I can follow?? I would like to use some fruit fillings but I'm not sure if the cakes would need to be refrigerated once they're done? I usually use buttercream icing between layers but want to be able to offer a variety of fillings to my customers. Thanks for any help you can give me!

i like using bettercream (or pastry pride) to make mousse's that don't need refrigeration. otherwise, i just mix in curds or preserves to my buttercream, and those don't need refrigeration either.

oh, and you can use fruit preserves or pastry sleeve fillings, and neither need refrigeration.

You can also mix in crushed up oreos in buttercream.
