I need to make a cake for a bridal shower to serve 50. Normally, I would make a tiered cake, but they requested a sheet cake. Would a 12 by 18 be large enough? And if so....would it take 3 cake mixes? I also need to make a claret red for the decorations. I was thinking of just taking red and adding just a touch of black to get it darker. What do you think? Any ideas? Or if you can answer any of these questions please help!!!
For the size, I make a 12x18 in a 3" high pan, torte once and fill the center and I tell people it serves 50-60 party size.
For claret, it's a tough color to get. I was trying to make ruby once from buttercream and nearly went out of my mind. My suggestion is to use Americolor if you have it, I'm told the super red is deeper than red red. Make it ahead of time and let it sit because the red does definitely "develop" as it sits. You could try adding the tiniest bit of black, but I think I was adding too much because I kept getting more of a brownish terra cotta color from the black. Just try to start ahead of time so it can sit and get darker.

The 12x18" pan serves 54. And you are correct, use 3 cake mixes.
