Need Help Asap

Ok I have a major problem. I took a wedding cake from my WI for next weekend so that she could go away (3 tier) and then I had a previous client mention a cake that she wanted done sometime in May....turns out to be this very same weekend...ok tough but not impossible she is willing to get her cake a day earlier. Well now I have a message on my machine for a first communion cake for this very same weekend!! I hate to turn the business away because I could really use it and my understanding from the person that referred her that she would be a frequent client. I don't know what to do!! How early can you bake and decorate a cake and keep a it refrigerated? I was thinking of doing the birthday cake Wednesday, Communion early Thursday and spend the rest of Thursday and Friday on the wedding cake but I'm worried about freshness. I usually complete the cake from A-Z all the day before it's due. What should I do!?!?!

I'm sorry, if it were me I would not take the third cake. icon_sad.gif It's a matter of your sanity and the quality of the product. I have a colleague (my old WMI) in town who I refer my overflow to.

Unfortunately I don't have have anyone I trust that I could pass anything off to. All 3 cakes are fairly simple in that there isn't a lot of detail work. The birthday cake is one I've done several of before and my understanding of the communion cake is that she just wants the cake baked, iced with the greeting and borders since she bought special decorations. The wedding cake I've been working on the details all week and it's just a matter of baking, icing and assembly. I know that if I didn't have the wedding cake this weekend I wouldn't have the other's either. Seems to work out that way every time! icon_sad.gif

Is it possible to bake and make the frosting one day and do the decortating the next. When I have three or more to do in a weekend this is what I do. It helps to have everything ready and then do all the decorating the same day. HTH

I agree with sarahd. If you feel you are capable of doing a quality job on all 3 cakes without going bonkers, since it is possible to maintain a respectable freshness, I would do all 3. Good Luck to you if you do!
