If I use meringue powder in whipping cream will it make it more stable? I want to use it for garnish on top of a chocolate torte, but I'm worried it may run all over the cake? Any ideas? I've tried cream of tartar and didn't find it made much difference.
Thanks
Ally

I added a half a packet of pudding mix to 2 cups of heavy whipping cream to frost and decorate a tres leches cake. I just did shells, but it piped well and held up for three hours outside the fridge at the party.

I have tried the stabilized whipped cream recipe on Cake Central. It adds gelatin.

I didn't try to ice anything with it, but it didn't break down after a 2 hr picnic and a couple days in the fridge.

There is a product called Whip It by Oetker that can be used to stabilize whipt cream quite well.
