i really nead help with my cakes. i've tried the medeira cake and its just too dense and dry. i'm looking for a cake to be soft and moist, can anyone help? i also find it difficult to convert the recipes in this website to grams which i'm used to using.any suggestions?i've got a bridal shower coming up soon and promised i will make a cake, so need a reply fast!!!

i make just a basic sponge. thats soft and moist. i weigh in ounces though so ill give you that recipe, you should be able to convert it using google or the like:

8oz self raising flour
8oz butter (i use stork)
8oz caster sugar
4 eggs

cream the butter and sugar, then add eggs, then flour.....

works for me! good luck!

thanks for the recipe. but you never mentioned for what pan size does this recipe ,make? would i need to make 2 cakes or does it make one large cake? also how do i increase the amount for bigger cake pans? sorry for asking so much!! icon_biggrin.gif

i use this recipe to make a circular cake 8" x 2"

i personally like to make 2 cakes 8" x 1" and sandwich them together but that is just my preference, you could do either.

to make a larger cake just double the mixture, treble it or so on. i have doubled it to make a larger cake before and had no problems what so ever. i have also done 1 and a half times the recipe before to make a taller cake.

its quite a variable recipe i find. i hope this helps!

say i want to use your cake recipe for a 9inch cake and for a 10 inch cake how would i know when to double or treble? can you show me what you do?and what about baking time?
