Greasing Our Pans?

I saw somewhere on here about mixing short, flour and oil to grease
the cake pans. I'm having a problem with my edges getting hard and I thought it might be due to using sprays. Does anyone know what
I'm taking about?

Equal parts crisco, oil and flour. Works like a charm. Cool cake about 10 minutes and it pops right out of the pan.

I don't know about what you are greasing the pan with, but hard edges/corners sounds like a temp issue. Maybe try baking at 325 if you aren't already. That way the edges won't be overdone by the time the middle is finished.

That's my best guess.

I am not sure of the mixture that you are taking about but I have had the same problems with the sides getting hard. I still use the sprays but now I just turn the oven down to 325 and bake a few minutes longer and I am seeing a much fuller cake. They don't stick and the sides don't pull away from the pan and become hard.

I remember my mom used to grease the pans with shortening and flour, but I think that was before they started making the sprays.

I used to get those hard edges too, and I always bake my cakes at 325. I now use the mixture (flour, oil, crisco) and don't have that issue at all anymore. It works flawlessly. I will never go back to the spray for baking cakes again.
