I am just wondering how long royal icing stays good? And can you freeze royal icing?

In the UK, its recommended that RI can be stored for up to 7 days in the fridge, and must be stored with a damp teatowel over the bowl, the teatowel must be changed regularly (preferrably daily) to prevent it going sour and contaminating the RI. It also advised that RI stored for longer than 7 days should not be used for human consumption! HTH

If you are talking about flowers or decoration already made and dried, they can probably be found in Egyptian tombs with other mummified remains. No, seriously, if they are kept dry and and covered - cardboard boxes are good - they will keep longer than you really want them. Don't keep them in sealed plastic containers- if they are not completely dry they could mold.

I think it would depend on whether your royal icing was made with real egg whites or with meringue powder, with the latter lasting much longer. Just rebeat when you use it again.

There is soooo much sugar to whites in royal... dried it keeps forever and moist until it stinks or molds... which I have yet to see and have found forgotten bowls on the counter weeks later (no, I didn't use it though). You will have to rebeat.

I use meringue powder in my recipe. The royal icing I have right now has been sitting on my counter for 7 days. I have a wedding cake that I need to do on the 23rd and I need the royal icing to tack the ribbon onto the cake. So that is why I am wondering how long it will last. By the time I use it, it will be 3 weeks old.

Can you freeze royal icing?

Meringue powder based royal icing should hold for that time in the fridge. Just use a damp paper towel on top of the royal icing before covering it (in airtight container) and rebeat the icing when you are ready to use.
