Mmf Questions

used it once before, but for a cake i was delivering in only a few hours. i now have a madhatter i'm doing, and it's being picked up tomorrow and not being served until sunday.

1) is mmf the best option?

2) if so, can it be refrigerated that long?

3) how soon should the client take it out of the fridge to bring the cake back to room temp?

I have always been taught not to refrigerate fondant, however I know some people do and have much success, I have been too scared. The condensation after taking out of fridge could cause your decos to go limp etc. If your filling is such that it does not need to be refrigerated, it should be fine sitting out for a couple of days.

MMf acts as a seal around your cake....bit like a Tupperware container!!!.... I'm not saying you can't, but I have never placed a fondant covered cake in the Fridge!! I usually cover mine on a Wed for Sat delivery and everyone always comments on how moist the cake is.. icon_smile.gif HTH

so you think she would be ok picking it up tomorrow night, and just leaving it covered until sunday afternoon? keep in mind that i'm doing the fondant today, so that's one more day included.

the decorations are quite simple. i was planning on doing a royal icing tiara, but she decided to go with an actual plastic tiara. i'm also thinking of doing starburst roses, or fondant roses, so those should be ok then too.

for a filling, is there anything besides buttercream that would be ok? she wants bottom and top layer to be chocolate cake (8 and 4) and the middle (6") to be strawberry cake. i've tried researching it, but the timing thing keeps throwing me off; i definitely don't want to make anyone sick.

I refrigerate all my MMF covered cakes.
It should be fine....in some more humid climates, people have some 'sweating' problems with their cakes, I do not.
I dunno where ya live......
I have made a mmf covered wedding cake 4 days in advance and it was fantastic...the aunt of the bride called and went on and on and on how good it was icon_biggrin.gificon_biggrin.gificon_biggrin.gif
