Can someone tell me how to do the chocolate dipped strawberries? What technique is used and what kind of chocolate is used?

I have done chocolate dipped strawberries but I recently discovered they worked better for me dipped in Sarah Bernhardt chocolate glaze. It stays softer and creamier than chocolate and the berries don't seem to ooze juice. The glaze keeps a nice shine to it and sets up enough to not melt if you touch the berries, yet doesn't shatter when you bite into them.

I'm not sure where the post is, but I remember someone saying that the berries should NOT be cold. Have them at room temperature. I made a mental note of this as it was something I would not have thought of! If you already knew this, than simply disregard!

ARG, can't remember who it was or when it was...

I used Nestle's over the weekend for the dark chocolate dipped strawberries. It seemed to set fine, but after nearly sitting for about 10 hours, we had trouble transferring them to their serving platters. The bottoms were stuck to the wax paper from the juice saturating the bottom. The vanilla appeals I bought from Sprouts turned out much better than the Nestle's for the bridal berries.

I, too, still have much learned regarding dipping strawberries. Another lesson is, do it the day of.

I had to transport the berries on a 2 hour trip before reaching their destination.

Those are called chocolate cigarellos, cigarettes or some call them chocolate pencils. I buy them ready made from Marque Foods in S. San Francisco. Scroll down to LU Pencils and Mona Lisa cigarettes.

Shirley, I tried the chocolate glaze on the weekend and OH MY GOODNESS!!! It was so good!! I made chocolate dipped strawberries as practice and we ate them up very quickly. I also had some glaze left over so I put it in the fridge to use later..... well it was used on a spoon that went to my mouth!! I couldn't stay out of it!! yumm!! Thank you so much for sharing the recipe and for all your helpful tips!!
