HI Im going to bother herebut I need some advice on a wedding cake, my second wedding cake ever!!!!!! The brides just send me and email telling me that she wants 150 pre-cut?????? Pieces, and a display cake with 3 or 4 tiers, I dont know exactly what she meantand I will look unprofessional if I asked herso Im asking here..jejejejeje PLEASE HELP ME!!! I think she want to cut down prices making a smaller decorated cake and a sheet cake to put on the back? Or Maybe she wants something else like individual decorated cakes or I dont know.The total serving will be for 250 people to 300. Another ? is: if she goes with a fondant cake, the pre-cut pieces will hace to be fondant too? Isnt going to be the same price then?...please I need serious help.
I need to answer her by tomorrow with some ideas and prices..

To me it sounds like she wants petite fours. Which is a cake cut into individual pieces then iced or poured with fondant then decorated to match the display cake. Or she could be wanting you to decorate a cake then have it pre-cut so its less of a hassle on the wedding day. I think pre-cut would dry out the cake.
I think you shoud ask her to clarify exactly what she is looking for. I hope this helps.
Definitely ask her to clarify.....I know that Sam's will do a pre-cut cake (I don't think that's what they call it) for "portion control". I would guess that you would just use a sharp knife to cut the cake slices, but not actually remove them from the rectangular shape of the cake....then ice together (like cupcake cakes are done). However, if she's wanting fondant, I don't know how that would work. Maybe she doesn't want fondant for the sheet cakes in the back? If she's trying to cut costs, she may not want to pay for fondant for those since most people will just take it off anyway.
Humm... I will do that, but if the petit are more expensive than a regular cake serving, whats the point? I think she wants to cut down prices having a smaler decorated cake, maybe a smaller but nicer to show of and the gross of the servings out of a sheet cake...

thanks for the advise, im writting her an email rigth now, asking her about the precut pieces and some other detais before taking the job. Every time I got a wedding cake call I got really nervous, I feel like crying and running, lol, I dont think I enjoy making wedding cakes...too much stress and Im on a level where I cant charge too much (This is my second wedding cake and been decorating for just a year). Thank and ANY help will be a lot for me. Thanks again...
