You'll find that there are lots of different ideas about what is a certain "size" around here. I don't really quote a cake as "1/2 sheet" etc. I just figure out how many people the cake needs to feed and go from there. My customers have been happy with it so far.

sunflowerfreak: not a dumb question at all...in fact most of us are divided on the answer icon_lol.gif This is what I use & serving sizes I go by...

1/4 sheet 9x13 15-20 people
1/2 sheet 2 9x13 30-40
full sheet 4 9x13 60-80

*edited to add...okay, sorry..have to edit again cause I mixed up my single & double layer serving size icon_redface.gificon_redface.gif

For the above sizes if I make a one layer sheet cake I follow the smaller serving for the pan...ex...If I make a one layer 1/4 sheet it feeds 15 if I make a 2 layer with a filling I go with the 20 people size

I know others use a 1/2 sheet pan for the half & full which I believe is 12x18...

I hope this helps.. thumbs_up.gif

There are 3 different choices in sheet cake sizes.

7x11
11x15
15x22

8x12
12x16
16x24

9x13
12x18
18x24

I have found locally that most of our bakeries use the first set. One local grocery store uses the middle set and I use the 3rd set.
I have also seen 12x18 referred to a 3/4 sheet

I always make sure my customers know how many servings my cakes serve and ask them how many they need. I also explain that different bakeries use different size sheets so they need to compare apples to apples.

Quadcrew...no problem thumbs_up.gif I actually have been paying more attention to serving sizes when I'm making cakes & cutting them.

I just edited above in my post to add something...

I just asked this same question. I guess I'm a tad bit on the obsessive side. I got to thinking about it and this is what I came up with:
9x12=108 sq inches=1/4 sheet
12x18=216 sq inches=1/2 sheet
18x24=432 sq inches=full sheet

i also have a question on this subject... when you say a double layer with filling, does that mean you'd have to bake 2 cakes, fill the middle and put them together or that you would just split one of them and fill it? i just thought making 2 1/2 sheet cakes to put on top of each other would be an awful lot of cake batter... thanks

I wasn't making fun - just commenting on how many times people ask this.

I think everyone does it different, but yes for my double layer with filling I make 2 cakes stacked on top with filling. Some people torte theirs into 2 layers, but I'm very clumsy & don't have enough coordination for that icon_lol.gif I do make the cakes a little thinner when I do this though. HTH
