this is only a bday party for a 2yr old, but you think i should suggest to the mom that the cake would be best covered fondant icing. she isn't sure if she wants a beach ball/pail or something to do w/sports balls, but either way...it is going to be very HOT & HUMID!! She just approaced me today and I'm suppose to get back to her w/some ideas and prices.

I just don't think I want to test my BC icing in 85-90+ degree weather!!

My son in law's birthday is in July...and I made him a sandcasltle cake... It was hot and humid too..ugh.. buttercreme icing held up just fine..I used pecan sandies cookies and made the sand with them... the cake was delicious..
Good luck in what ever you choose to do.

Whatever you do, remember she's asked you for ideas. So, tell her if you think it should be fondant or sanded (love the pecan sandies idea - omg how good would that be???). If she wants plain buttercream, I think I'd pass. Would she be happy with a small cake for pictures and really nice cookies for everyone else? Those would hold up and be a lot less hassle for serving, necessary paper goods, clean-up, etc.

I'd go with fondant too, but put a nice layer of bc under it for the fondant haters and chill it really well overnight, it should be fine!

I have never worked with fondant but I do live in Miami, and certainly know the hot weather. I have decorated my cakes with Wilton BC (all shortening) while the cake is under shade in a shelter in the middle of August with no problem.
