Hi everyone,
Once again I need your expert help! My mom came from South America to spend mother's day with me, (I am happy!!!!) and I would like to make a wonferful and tasty cake for her. She loves cakes!! I am looking for a recipe for a moist cake with a white cream filing (It could be vanilla, coconut, etc) One thing for sure is that she does not like buttercream.
I would really appreciate any suggestion

Then for the frosting, does she not like the Wilton type buttercream w/ shortening, powdered sugar? If not, what about the "Real" buttercream like the Duff Goldman buttercream recipe

Or maybe you could use the frosting that's made with refrigerated whipped topping and instant pudding? Maybe fill the cake with a fruit filling? ![]()
I agree, WASC is amazingly good and very moist. I've made it twice and it turned out perfectly both times.
For the frosting/filling, if your mom doesn't like buttercream made with icing sugar, perhaps you could use whipped cream or Cool Whip mixed with toasted coconut, or, one of my favourites, is Cool Whip folded into lemon pie filling. It's heavenly!
Duff's buttercream is really nice, but you do have to add some kind of flavouring to it. Easy to do with any extract. It is very buttery, so if it's the butter she doesn't like, then maybe not this kind - it's a meringue buttercream. I think it's delicious!
