Just wondering if anyone has made WASC with four whole eggs in stead of 8 whites, and how it turned out? Also, does this recipe convert well to use with other mix flavors?

I always use 6 whole eggs instead of 8 whites. It turns out fabulous!
I've never tried other flavors, but I have heard that it is a great recipe for any flavor...even chocolate.

I also use 6 whole eggs. I've tried the chocolate version, and it's great too. Oh, and I usually use a french vanilla mix instead of the basic white and add extra vanilla instead of the almond extract (in case of nut allergies). I always get many compliments on these cakes!

I use French Vanilla mix and whole eggs. It is my best selling.

If you want to replace the almond extract with french vanilla extract how much more would you add?

wgoat5, that would be 2 tsp.

Here's the WASC with more flavor variations:

I always use the whole eggs, too. I use 7 eggs and it's very tasty.

i've never done it with Chocolate cake, I may have to give it a shot!

I did not really like the almond extract so perhaps I will try another flavoring. I think I will also try with whole eggs next time also!

I love this board icon_biggrin.gif

I use the whites only for making the actual WASC recipe (one of my best sellers), but use whole eggs for everything else. What I love so much about this recipe is the texture, stability, and moistness of every flavor I've tried with it.

so it would be ok to have all four tsps being vanilla? Just because of nut allergies I wanted to be able to replace the almond

Thanks Jan

Yes, if you want to just do vanilla, you do 4 tsp of vanilla instead of the 2 vanilla and 2 almond. It works great for me.

That would be fine to add more vanilla. I actually never measure vanilla. I pour until my hearts content.

Yes - I've done chocolate and it seems to be just as sturdy as the white version. I really like it because chocolate cakes can be dry if overcooked and this one is so moist. It's great!

I use whole eggs also. I've experimented with 6 whole + 2 whites, 6 whole only, and 4 whole + 4 whites. All turned out good! Also used all vanilla-no almond for marble cake. Also good! I haven't tried the chocolate, but will soon based on the reviews thumbs_up.gif

That is great to know about the chocolate - I have been struggling to find a recipe I really like that won't crumble when I try and work with it and also that isn't dry if it is easier to work with! I love the WASC recipe though so I am going to try the variations!

I went to the link for flavor variations, and noticed that she calls for Betty Crocker or Pillsbury. Can't imagine that that really makes a difference, but does anyone know?

I use DH all the time and it always turns out great - I can't imagine after you add all the stuff in there it would make a huge difference - but I could be wrong - I just know that for me it turns out fine with DH mix!
