What is the shelf life of marshmallow fondant?

MM Fondant will hold very well in the refrigerator for weeks. If I know that I have a cake to decorate, I usually make 2 batches on a free night during the week so it is ready when I need it. I never have gone over two weeks though. Hope this helps.

I did Easter cookies with some left over MMF I made around Valentine's Day So about 2-month old MMF) and I could tell that the MMF on the cookies was "old." It wasn't rotten or anything, and it was edible; but the texture wasn't as great and it just didn't taste as good as the fresh stuff. So 2 months (IMO) was too long to keep MMF. Maybe about month would be okay???

I just bought some Fondx and it says the shelf life is 6 months...

but doesn't fondant "sweat" in the fridge??

You don't have to keep it in the refrigerator -- it's pure sugar so there's nothing to go "bad" about it. I just keep mine tightly wrapped in gallon-sized ziploc baggies, and when I need some I just nuke it and knead it with crisco to freshen it up.

After 2 months or so they just get so hard that there's no way to work with it, so I do throw them away at that point.
