OMG.........I was just about to post almost the same question. I wanted to know about the frosting on an ice cream cake as well. If a whipped icing is good to use, if not then what do you guys use?

I worked as manager at DQ and the main cake decorator for about 2 years and the type of icing we used was the rich's bettercreme but I think that buttercream would work fine. I'm pretty sure all DQ's use that icing for the borders because most DQ's have contracts with the same supplier. If you have any questions send me a pm. Sometimes I don't get to check out the board as often as I would like but if I get a pm then I get a message sent to my email as well.

Good luck. Hope everything goes well!!!

whipped cream (or a chemical soup substitute) is your best bet. It will be served frozen, so anything with butter will be too firm.

At least a few hours before you are going to assemble the cake, press the slightly softened ice cream into a saran wrap lined pan the same size as the cake and refreeze it. Makes assembly much faster, which in turn gives you a lot more work time before it has to go back in the freezer.
