I have to admit, this was a pretty LONG weekend for most of us. I worked ALL day Saturday and then Sunday as well. Monday rolled around and I was involved with the local parade for Memorial Day. All weekend, thinking I had something to do, but couldn't remember for the life of me.
Monday afternoon, after walking in the sun all day long in that dang parade, it hit me....OMG I needed to do a cake. And not any cake, a 2 tiered bridal shower cake - by tomorrow!!! Holy Cow! - It was already 4pm and I was headed back to work Tuesday!
As rushed as I was, I ran to Michaels, grabbed a few things, along with a box that would fit a 8" round, scurried home and began baking. By now, it was 6:30. I began making all the b/c, 2 types of filling and chocolate ganache. Don't ask me how I did it. Cakes were done by 9pm and starting to cool. Normally, this would take me 2 days by the time I wrapped and froze them. I just cut them down and shoved them into the freezer for maybe 30 minutes - just to help.
11o'clock rolls around and Im finishing the finishing touches on my cake - looks perfect - Thinking "Not bad for the same day AND trying to cover up chocolate cake - set it on the Michaels cake box which was to "fit" the 8" round and slowly began to move it.
THE ENTIRE CAKE SMASHED AGAINST MY FIST!!! I will NEVER buy those dang boxes again. I salvaged as much as I could, covering up the GIANT hole my hand made against the cake and threw it in the fridge. I think I was hoping some magic fairies would come and fix it overnight. To my surprise, they wern't working that night. The cake looked like crap the next day.
Luckily, I work in town, so I ran home on my lunch the next day, whipped up a half batch of french b/c and finished it. Threw some roses on top and a few more decorations and called it a day.
The cake was a hit. And no one ever knew
