Timing With Cake Decorating And Assembly

Hi Everyone,

I am making a 2 tiered castle cake this weekend. Since it is my first time stacking a cake and doing a castle cake I wanted to take this in stages.

I am going to bake/freeze the cakes by Thursday evening and make the BC on Thursday. If I frost and assemble the stacked cakes on Friday can I refrigerate the cakes at this point or will it dry the cakes out? This way I can assemble the rest of the cake/decorate on Saturday morning.

I don't have anywhere in my apartment to keep the cakes out without the possibility of us tripping over them and ruining them.

I could frost/stack/assemble the cake on Saturday morning but I'd only have between 11-4 to do so, and I'm worried that will not be enough time for me.

I would think it would be ok as long as it is not fondant. But I never refrigerate my cakes so hopefully someone else will be of more help.
