Can anyone suggest an easy cake filling that does not require refrigeration -- making a cake covered in BC and fondant and don't want to refrigerate but want to fill the layers....

Thanks!

icon_biggrin.gif you can use any curd- I like lemon- or Nutella- or any seedless jam......They can be used alone, or mixed in with some BC........

What flavor is your cake?

I would stick with fillings containing a fair amount of sugar and no egg-based products. Sugar acts like a preservative, so something like a ganache would be good, also jams and preserves. You could do buttercream, maybe a whipped version where it is more light. Fruit would be ok if you sprinkle with a bit of sugar, I would think, and maybe some Fruit Fresh to keep some fruits from turning, such as bananas.
