That's a really cute graphic.

I had good luck piping over a drawing with buttercream - it's my happy dancing turtle in my pictures. I did it that way because I wanted him to have some contours, instead of being flat, as FBCTs are. When I did that one, I did an edible image on wafer paper and cut it out and then just stuck it on the cake and started piping buttercream on the design, right on top of the cake. But, you could easily do it on plastic wrap stretched over a print-out...and then freeze the finished design and lift it off the plastic and onto the cake. I think buttercream is so much nicer to cut and serve than royal or color flow.

I love the turtle! I guess that's another thing I don't like about transfers... they're flat and have no texture. Your turtle has life.

I looked at your edible image cakes too. This is the first time I've been impressed with one. Yours are beautiful. I've been toying with the idea of getting a printer and doing them too. You may have pushed me over the edge.

I think the edible image on wafer paper...then overpiping with buttercream would work VERY well for you. Edible images on icing sheets - the "typical" edible image - might not. I've had some bleeding with just really soft buttercream. In your case, I'm thinking that the least bit of condensation is going to wreak havoc with an icing sheet. You're going to always be fighting condensation versus your artwork on your ice cream cakes, I fear. I think buttercream is going to be the most stable medium for you.
