How Many Layers For Wedding Cake Tiers?

my first wedding cake is coming up, I was wondering if most people do each tier with 4 layers of cake or what? How do you get each tier exactly the same height? Also i knowtice that when you cut into wedding cakes, each torted level is alot thinner that like normal birthday cakes, do i need to cut quite a bit of the dome off so i can be sure each one is perfectly flat? thanks in advance!
I did my first wedding cake with 2 2in layers for each cake. I didn't torte and generally don't. Personal preference. And yes the dome needs cutting off unless you use the method I've read on here. Some use a tea towel to press down the dome. Not for sure exactly how. Maybe someone else can help you.
I make mine 2- 2 in layers. To level, I take a length of unflavored dental floss extending about 2 in. beyond the pan, on both sides, let it ride against the top edge of the pan, starting on the side farthest away from me. then moving towards me, with a side to side "sawing motion" I cut thru the cake, then remove the excess off the top. I have also used a large plastic cutting board, after it comes out of the oven. put it over the top of the pan & pressed until the board lies flat against the top of the pan. Remove from pan to cooling rack.
I don't torte, no one requests it.
To level each cake: as soon as the cake comes out of the oven, place pan on cooling rack. Immediately place a thick terry towel on top of the entire surface. Press hard all over surface, keep checking til it's level. Also, when you bake your cakes, bake them at 325 degrees.
I bake 2 cakes for each tier, then place BC frosting in between the layers. Easier than torting each cake.
