So I had this cake yesterday (store bought) and the icing was whipped cream and the filling was strawberry. I would love to recreate it myself. The filling has strawberries in it but it was in a glaze on some sort of satarberry mixture and I was wondering if anyone knows what I am speaking about. I have made whipped icing before but the one on the cake was a bit greesy.....not sure if anyone knows what I am speaking about but if you do please help. Thanks Jen

I think I know what you mean. My the SIL of my sis loves cakes from H.E.B grocery store bakeries, but I recreate them for her birthdays. I use this strawberry glaze (with fresh strawberries, as well) for the filling of strawberry shortcake or on my cheesecakes.

1 cup mashed strawberries (fresh or frozen)
1 cup sugar
1 TBsp cornstarch
1/2 cup water

Mix sugar and cornstarch in 2 qt. saucepan. Gradually stir in the water and mashed strawberries. Cook over med. heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; Cool to room temp. Use along with fresh, sliced strawberries for filling a cake or along with whole, fresh strawberries for top of cheesecake or top of frosted cake.

To frost these "fruit" type cakes, I usually use refrigerated whip topping mixed with instant pudding and half the milk. I've also made one with all of the above components and a second filling of cream cheese frosting and the sides of the cake covered in toasted, slivered almonds.
