Cream Cheese Icing/edible Images

Does the color of cream cheese frosting have any strong yellow hue to it? I need it to be as white as possible and can I place an edible image on it AND (one more thing icon_rolleyes.gif ) can I color the icing without it drastically changing the color I am trying to achieve and the taste!!!!!!


I know this should be a big duh for me but I am making the 99th Nurse Corps birthday cake for this coming friday the 11th and I am making a spice cake with a cream cheese filling and a cream cheese icing. I have only ever used buttercream. I have made this cake/filling combo before but with buttercream. I just want to try cream cheese frosting this time. OR, do you think it will be too much cream cheese?

I just finished a baby shower cake with crusting cream cheese frosting. It only has an ivory color-sorta off white. Not sure how to make it white white. My only problem I had was it was sooooo humid yesterday, I had to turn on my AC to keep it firm enough to work with. Hope that is some help.

Sorry, forgot to answer about the coloring, I used it the the "cars -McQueen" (I think that's the name) pan so had red, orange, yellow,black. Baby shower cake had blue, yellow, pink, lt. green. It colors fine and didn't see any change in the taste.

I am going to just keep it white or off white I guess and color some yellow and blue for flowers. Maybe some red too. I bet it held the red really well for the McQueen cake!!!!

The ceremony for the Nurse Corps birthday will be at 0730 so it will definately be cool.

I have added wilton icing whitener to cc icing with good success. you could also try using a **touch** of violet to offset the yellow color.

Paddle the crap out of the icing and it will get a little whiter. Mine is the same tone as my all-butter buttercreams so no biggie for me. Yes, it will work fine with the edible image and you shouldn't notice a difference when coloring it. Also, i think it will not be too much cream cheese taste.

Thank you for the suggestion of the whitener! I have some so I'll give it a try.

Kory, also thank you the suggestion of paddling the crap out of it. icon_lol.gificon_lol.gificon_lol.gificon_lol.gificon_lol.gif I do notice that icing tends to whiten a bit when "beaten" to death!!! icon_lol.gificon_lol.gif Just have to watch out for the air pockets.

I'm happy it will work with the edible image. I just didn't want a disaster on my hands so that's why I polled ya'll!

Thank you ever so much. I have to make the flowers for the cake tomorrow. The cake is for Friday. Gotta have the flowers ready to go!!!
