I've never been able to make this work good for me. The big whimsical type of "curls" that you stick in the cake and they stick out? I'm not sure I'm explaining this right. I've tried to make them out of royal icing but they aren't sturdy enough. What do you use and do you stick them in at the last minuet so they'll stay?

I hope this makes sense.........

Are you talking about the spiral curls . Those I make out of fondant strips rolled around a dowel until they are dry. If you need them to dry faster add some tylose powder to the fondant or use gumpaste for them.

i think i know what you are talking about, like in the wilton yearbook on the quincera (sp?) cake? the big pink one with white curls coming out of it? i always thought they were made of RI too. there's someone who made a cake with them on it recently, if i can find the picture i'll pm her to share her secrets. (dont hold your breath tho, im on dial up)

nvm, no pics. my computer is being stupid. (and i always thought technology was supposed to help us) icon_sad.gif but in the yearbook it says that they are made of RI. maybe make em thicker?

Maybe use royal icing and make them somewhat thick and when they are try, turn them over and pipe the back too. It would also add dimension from the back side.

I think fondant would work easier for you- as Granpam said. Just allow for drying time.

if you're talking about the same thing im thinking of.... i can't imagine attempting that in RI. use gumpaste or fondant, spiraled around a dowel and let dry, just like some of the above posters said. thats how colette peters, and elisa straus do it. the instructions are in their books, and thats exactly what they say to do.
