My New Buttercream Help Please!!

Hello,

I am doing a new french recipe buttercream because they don't really like the habitual buttercream so i do like italian recipe, i make sugar with water and boil and i ag to my yellow eggs and mix well after i ad the butter but i see in the forum that with the meringue powder it will crust so do you think i can as just the wgite egg or meringue powder?

I hope you understand my question n icon_biggrin.gif

Hi doudon- adding meringue powder to this type of buttercream (cooked sugar syrup + egg yolks or whites) will not make it crust. Crusting buttercreams are those made with butter &/or shortening & powdered sugar (also called confectioners sugar or icing sugar).
