My Royal Icing Dried Like A Dry Sponge

I made a ton of royal icing daisies and today they look awful. They look like a dry sponge, lots of dents and divits. Not smooth at all. I am sure I can't fix these, but can anyone help me figure out what I did wrong to cause this? Underbeat or maybe overbeat my icing? I made a double batch of royal in my kitchen aid and beat for approx 7 minutes. It didn't seem quite long enough but it was not shiny and very stiff.

I think you might have overbeat the icing. I have had flowers decinagrate(sp?) on me when i have overbeat the icing, and they looked sponge inside, but still smooth on the outside, so i'm just guessing here for you.

Are you beating on LOW speed? Also, I use the paddle attachment, not the whisk. Less air bubbles that way.
