I'm icing an ice cream cake with buttercream icing. Its not sticking to the ice cream.........I was told that I could use buttercream...now i'm thinking its not such a good idea. I tried ice cream and whipped topping mixed together and it melts really fast and cant seem to get it smooth. Any ideas would be great icon_cry.gif

Pastry Pride

Go to Smart and Final... it is frozen so you need to defrost for a little while in your fridge. Pour into the mixer and whip it up... so easy and so tasty. Would go perfect with an ice cream cake!

Regular whipped cream will work as well. The trick is to have your cake frozen SOLID and work quickly. As soon as it starts to melt, nothing is going to stick to it. Buttercream is not a good idea on IC cakes because the end product will be served frozen.
