I made a French Vanilla cake & was going to make a strawberry filling. Well I thawed the strawberries and they look terrible. they aren't even red and I don't think I'm going to use them. I do have a box of inst. french vanilla pudding. can i make a filling out of that? any other suggestions? my cake is cooling right now.

Whip it up with 2c of heavy cream and you will have a fantastic mousse. If you take the strawberries you have puree them, cook the water out, and strain them you can add them (cooled) to the mousse or as a layer above or below it to keep with your original thought.

Ive tried both methods; yours and KoryAK. Just make sure you refrig the cake if you are using the pudding b/c it has milk in it. I really liked the strawberry mousse too. icon_rolleyes.gif

I just made the pudding like the box says & it was really good. The cake was underdone though. It didn't cook up either. The layers were very, very thin. I wanted to torte it but I didn't let it cool enough plus it wasn't cooked all the way. It was just for practice, to find something else good I can make besides chocolate, so it's fine.

I do the same as Kory, whip up a container of heavy cream and add pudding mix.

I like to use the 2 cup whipping cream. It's a new size our store stared to carry.

If you were really searching for the strawberry flavor, I use strawberry preserves (usually mixed w/buttercream) as a filling in most of my cakes. It's really good!

Sorry for the Ding-Dong Question... But when you say whipping cream are you using Cool Whip?

Exactly what is Heavy Cream?

My DH does all the cooking, but he does not bake...

Heavy cream is sold in the Dairy department. It is usally pint size.

I never looked to see if there is directions on the carton. I just know you whip it at high speed until it firms like cool whip, but you have to be sure you don't over beat it.

No, not cool whip...ya know the stuff in the carton? The stuff ya have to whip yourself...its usually above all the milk....says 'ultra pasteurized whipping cream'...because ya know how it taked 2 cups of cold milk to make the box of pudding? Well I just substitute that with the whipping cream outta the carton...so its stable enough for a filling....its like Costco fillings thumbs_up.gif
