I am now starting to freak out about this wedding cake I am doing, for my best friend, on Memorial Day. I have a square 16", a ruond 12" and a round 8". I really don't want to use separator plates. I know that I have to use the dowel rods, but do I just use a cardboard to hold the 2nd and top layer of the cake? At the reception, how are they going to get the top of the 2nd and the 2nd off the 3rd? I have been kinda nervous about this cake and now the nervous has turned in to panic!! What should I do? Anybody who can help that would be totally amazing!!
i do a double cardboard on a stacked cake and dowel each layer and depending if i assemble it there or travel with it assembled do i put the dowel down the middle. my cardboards sit right on the dowels with no pressure at all on the cake... then i do a larger border so you cant see any space.. to take it apart i suggest cutting it up in a seperate room just in case it gets messy, but you just pull the top and 2nd tier off and start slicing up the bottom.. the only thing thst gets messy is basically the borders..
For a stacked cake I would recommend covering your cake board with something. I use the fanci-foil from wilton. For the cakes that are sitting on top of another one I also cover the bottom. I have seen some cake boards absorb the grease and seem like they are going to fall apart. Not sure if it was just the cake boards or something in the cakes. But just a FYI
