I made fondant roses for my course 3 cake. I added just a touch of gumtex so they would dry more quickly. I took that course several months ago and the cake (dummy of course) is still as beautiful as it was the day I made it. It is sitting in my den. I couldn't fathom the thought of throwing away all the flowers that took me HOURS AND HOURS to make!! LOL SO yes, they will keep for a LONG time...and maybe forever as long as they don't get wet or too much sunshine (which will fade them).

They'll last a long time - my MIL still has some from her birthday in July last year.
