I tried to make MMF once, and it was so hard and crumbly, that I got frustrated and threw it away. I am willing to try again, but need to know what the secret is. Did I let my marshmallows get too hot, do I need to reheat, what can I do to make it turn out right? I have some possible wedding cake orders, and would like to make some MMF for the bride to taste so that she has some options.
Any thoughts would help. Thanks!

Here is a suggestion I had. You don't always need all the powdered sugar, and if it's too dry, kneed it with shortening on your hands. I just used it to make ALOT of "rocks" for a project for my DD's preschool and I actually nuked mine for about 5 second increments in a small portion. Keep working with it. I've seen so many cool things here to want to keep playing! Good luck!

Don't be desesperate Ericksmom !!!

I did the same thing as you las week !!! And the MMF was so hard !!! I have put a lot of grease to try to arrange that ... icon_confused.gif

Finally I have decided to roll it ... It was not bad at all !!! But when I put it on the cake ... ... ... it has striped all around the cake !!! I have wanted to cry !!! icon_cry.gif

Hopefully, this cake wasn't sold, the cake was for my Mother birthday and I have decided to transform the nice MMF cake I have in my mind in flowers bunch .!.!.!.!.

Next week I have to re-try the MMF and hope it will be better !!!

I probably use 1/4 cup to 1/3 cup less powdered sugar than what the recipe calls for. I grease EVERYTHING with Crisco - the work surface, rolling pin, hands, etc! Once it has time to rest and you think it is to hard to work with - nuke it for about 5 seconds. That should help. Good luck with it!! I love that stuff!!

Hi there,

I actually had the same problem. I tried to make MMF for the first time last week for my cousin's graduation cake. The first batch I made (directions from CC) came out terrible.....I followed all directions and I also have a Kitchenaid and used it. It came out like a ROCK! I just tossed it. Then I decided to try again without using the Kitchenaid. It came out PERFECT!!!! I couldn't ask for any better. The trick was to mix in the powdered sugar a little at a time (by hand) until it reaches the consistency you like. **I did NOT use a whole 2 lb. bag** It tasted awesome and worked really well.

The only issue I would say I had was how sticky it was. I kept forgetting to put shortening between my fingers. I also used a mix of cornstarch and powdered sugar when rolling it out. You can look at my posted graduation picture....no cracking, very smooth and not dry at all. I hope this info. helps.
