Has anyone made a 3 tier wedding cake using the white whisper chocolate cake from the "Cake Bible?" I am having trouble adjusting the recipe for 10," 8," NS 6." The method for the Rose factor doesn't include the white chocolate. So I am not sure how to adjust it for the chocolate. Thanks

Cake Bible is one of my favorite books, so I dug out my copy and I'm looking at the recipe now. I agree that there is no way to figure the adjustment amount of white chocolate....inconvenient.
I've never made this for a wedding cake, but I have made it. It shrinks more than you would think once its out of the oven, so don't get worried.
Ok, so this is in no way scientific, just an educated guess. The yield is 2 9" pans. If you are looking to get a 10/8/6 double layer ( i'm assuming) and you make it 3X, you can get all the tiers you need.
Again, I'll assume you have a 4 1/2 or 5 qt mixer. First batch, scale your 2 8". Second batch, scale one 10" and one 6", third batch the same.
That would mean you'll need 1# 2 oz of white chocolate
