I just took my cakes out of the fridge to finish decorating them before my customer arrives at 7 (3 hours from now) and they are starting to sweat. This is buttercream icing so I'm not sure where to go from here. Will it stop when it gets to room temp?! I'm pulling my hair out with worry. What do I do? Or can I not do anything?

Please help!

Jennie

Sweating is the primary reason I never refrigerate. You'll just have to wait for it to dry. Depending on the humidity, it might take a while. A fan might help....

Don't worry I bet it will be ok when it warms up. I know the fbct always get real wet as they are thawing and I usually have to wait for my cake with the crumb coat on it to warm up before I put a real coat of icing on.

Could you gently pat the worst off with a paper towel or are they too highly decorated to do that?

If you have a small fan or a ceiling fan, this will help dry the condensation.

Thank you all so much for your help! okred, I put the cake under the ceiling fan and it's already looking better! I don't know why it is when you panic you lose all sense of clarity...

Thanks so much!

Thanks, okred! The last one uploaded with the purple ribbon roses & pearls is the one that was sweating. It turned out pretty nice, I think. It was all dry (from your brilliant ceiling fan idea) by the time my customer showed up to pick it up.
