Sheet Cake Question

Hi....This is going to be my first time making a sheet cake. The largest I've done is a 1/4 sheet....She wants it filled, so instead of attempted to torte it, I'm going to bake 2 layers. My question is normally I flip the 2nd layer on top, but with a cake this big, what's the easist way to get the 2nd layer on. Should I freeze it part way, so it's easier to handle?....my worst fear is that it'll break in a million pieces.....

Definitely freeze it! It is a lot easier. I do the same thing - bake 2 layers instead of torting. I would bake and freeze. Then fill and stack while frozen, let sit a little to thaw, then decorate. I bet it will work great.

I have used a flat cookie sheet with no sides to sort of slide a layer on but I think freezing is better - I feel more confident handling the stiffer frozen layer. icon_smile.gif Good luck!

I like to use a large baking sheet and slide it, although I slide from the side which is easier since it's a shorter distance. Hope that makes sense.

The biggest I've done is an 11 X 15 and I torted, but I used my pizza peel and it worked great.

I used cake boards and slide the cake off...

i also use a cake board and then slide it off.....

I just did my first 12x18 and I had some trouble out of it. It stuck to the pan a little and I torted it. I used the cake board to slide the top back on. After the icing you would never know it was broke. Good Luck icon_biggrin.gif

I freeze completely, then it just lifts off easily.
