I've made my flowers in royal icing and will let them set at room temp. But now I'm wondering if I should have. I'm making a cake on Thursday, delivering Friday for Sunday's Baptism. I figured the cake would be ok as long as they refigerate it but will royal icing hold up. And actually will the cake be ok that long? Help!
Also, I'm in a humid area (St Louis) will that destroy the royal icing?

IMHO I your flowers should be fine, however, I suggest that you simple syrup the cakes in order to help keep them moist, because refrigerating cakes is very drying to them. Freezing a cake and thawing it out prior to serving is actually better for its moisteness than refrigerating.....
The air in refrig. is drying to cakes. Two days in there might cause it to be dried out.

Royal icing flowers alone will last in a sealed container for almost a year. I suggest waiting until the last minute to place your royal icing flowers. You dont want to get them near any humidity, or grease, since it breaks down the flowers. I hope I understood your question correctly...
As for a decorated cake, it should be fine to sit at room temp for a couple of days once you deliver it. Unless you have something highly perishable in the cake, you are good to go.

Royal icing flowers in a frig will break down very quickly. Store them at room temp away from light and dust (in a cardboard box that breathes would be good) and place on the cake the morning of delivery if you want them to stay crunchy, or the day before so they start to soften up.

Thanks everyone for your help! It was much needed & much appreciated. And sorry for not being clear. I was feeding my baby and typing all at the same time. Trying to do to much at once!
