I'm going to try my first cupcake cake in a couple days for my husband's birthday, but I wanted to do something different with the cupcakes, like adding a filling. Problem is I've never done that before. How do you add filling to a cupcake and does anyone have a recommendation for the type of filling that can sit out for several hours? Thanks!
I would just use my buttercream icing and pipe a mound of icing into the cupcake using tip 2 or 3. (Like a hostess twinkie) You may have to eat a couple just to see how hard to squeeze to get the proper amount inside the cupcake. I do this with petit fours -- works great!

You can use a "bismarck" tip, I think it's 230 but I'm not going to swear to it. Insert into the cupcake and squeeze filling into the cupcake until it starts to barely bulge at the top. If you get too much filling in there, the cupcake will fall apart when you take the paper off of it. I wouldn't use BC if you are going to ice with BC because that would be a lot of BC for not much cake. You could fill them with anything you would fill a cake with.

I recently filled my cupcakes for the 1st time and it's the only way I will serve cupcakes from now one. You feel a little buldgy puff and you get an idea w/ the weight of them to. Good luck ![]()
