1. I won't use buttercream on a cake whose layers are tapered in toward the bottom. (Hello, gravity.)
2. I won't use real butter buttercream on a big cake when we're having 99% humidity.
3. I won't use multiple flower spikes to stick my wires into a top tier of a cake.
These and possible other factors led to the top tier of my cake splitting in two, tumbling down the sides, and smashing the fragile, non-crusted buttercream details on the two tiers below.
I try to be thankful for these opportunities to be humbled, but man, it's hard. ![]()
For me it is taking shortcuts...like not sifting my powdered sugar. man I hate having to do things over!

There were lots of things to be thankful about with this cake disaster (which I got to somewhat repair).
For one, it is just for a very informal shower (combined with a faculty meeting) at school. Usually they order from WalMart, so at l least they're not expecting an exquisite work of art. Plus, it'll still taste home-made.
And another good thing is that the social committe only gave me $15 for supplies, so I don't feel guilty for being paid for less-than-fabulous results.
AND... at least I learned a lot! ![]()
