Just AWing a little. Last night I made (and posted in my pics) taco cakes for an early work Cinco de Mayo party today. I had so much fun and although time consuming they are fairly simple! I'm loving the reactions of my coworkers who refuse to believe it is cake!

I would be happy to share the how it was done with anyone if they want it!

Wow, those are amazing! I might have to go get Mexican food for lunch icon_smile.gif Can you post how you did it?

It's devils food cake (nice and dark), with a little bit of chocoate buttercream on top to get the "lettuce" and "cheese" to stick. The lettuce and cheese is colored coconut. The sour cream is buttercream. The shell is white chocolate melted with crisco, yellow coloring and a tiny bit of crushed oreo crisps. Spoon the chocolate out on wax paper and spread to your desired size. Place a slice of cake on the chocolate circle and once the chocolate has set up a little bring the wax paper/chocolate up the sides of the cake and place in the fridge to set up. Once it is fully set up, remove the wax paper and add the toppings! thumbs_up.gif
