SOMEHOW tint crushed graham crackers green (maybe airbrush) and make them look like grass?
Here is the deal. Had a call yesterday from a lady (never done cakes for her) who tasted one of my cakes at a nephew's birthday party. Get the details: 7 yr old; dirt bikes, four wheelers, etc. Wants a"bike trail" sheet cake. When I asked her about flavor she said she LOVED my chocolate cake and would like chocolate icing as well. I explained that trying to get the green, etc. might be a little tough and talked her into using white icing with chocolate cake with chocolate icing reserved for the hills (mini ball pans). But, I would really like to give her what she would like.
Anyone got any ideas? TIA!

Make everything chocolate except for the grass. Or, tint coconut.
Coconut!!! (As mentioned above.) Easy to tint, takes color GREAT, and dries reasonably fast. And you can even toast it slightly so that (1) it tastes better, and (2) it's slightly more realistic (since down here the grass is almost always brownish at the tips due to drought conditions and watering restrictions).
And tubinado sugar (raw sugar, sugar in the raw, etc.) makes great sandy dirt, btw.
I automatically thought the same thing as thecupcakemom...use just a little bit of white icing colored green for the grass. I bet they don't even notice that it is not the same icing. The chocolate taste will overpower the little bit of green grass easily.
Plus, you can take out what you need prior to adding the chocolate to the icing - at not extra cost to you. The idea of coconut is awesome, but if you have already agreed on a price, adding the cocount will cut into your profit margin! ![]()

I did a racing dirt bike track for a birthday back in November. They wanted chocolate cake with chocolate frosting.
So, I used bc that I added chocolate flavoring to and then colored it green. I purchased the chocolate flavoring at a local cake supply shop and it is clear and doesn't color the frosting at all.
I have also heard of people using a little bit of jello (white chocolate) mixed with their liquid when making their bc to flavor it before, but I would think that might be grainy.
Check my pics out for the dirt track. I had baked a small yellow cake and crumbled it into tiny, tiny pieces and put into a zip loc bag for the lady to sprinkle on the track to make it look more like dirt, but she liked the brown frosting for the track and they just ate the cake crumbs.
