Help!! Baking Today!

I am baking my first 11 x 15 cake and I have a question. I think I have read that you should stick a flower nail in the middle for it to bake well. Should I do this or will it bake just fine with out it?

I always use a flower nail in mine!

I have a quick question, do you always use a nail in the middle of cakes when baking them, or just the big cakes?

I use it in the ten inch and above. The half sheet cake and the full sheet cake I use more than one.

For the 11x15 and 12x18 cake (especially if you doctor up a cake mix), do you just use one flower nail in the middle or do you use 2?

If you bake at 325 you do not need a nail. I have good pans which is the secret to even heating and even cooking.

I use Wilton's heat core, which I got at Michaels, for any cake over 10", and it works great.

So if you bake any cake at 325 degrees, then there is no need for a flower nail? Obviously you would need to bake the cake longer until the center of the cake is done (testing it with a tooth pick), correct?
